Basketti had to eventually end up on the menu, right? This is not a meal that I really plan for, it's more like a back-pocket meal that is ready to rock & roll with ingredients that are always on hand.
Meat Sauce:
Pasta:
Barilla Plus Spaghetti
This pasta has wonderful nutritional value
& no one in my family even knows it's the healthy kind.
Side Salad:
- lettuce
- cucumbers
- shredded carrots
- freshly grated Parmesan
- Newman's Own Balsamic Vinaigrette
- baguette, fresh from the local baker
- crushed garlic clove + 2 T evoo, microwave for about 30 seconds
- butter (I Can't Believe it's Not Butter Mediterrean Blend) the bread & brush with garlic/oil
- pan grill until lightly toasted
- sprinkle with salt & garlic powder
Leftover potential: I always make enough basketti for a least two meals & we either eat it for lunch or another dinner. Freeze leftover pasta & sauce separately for a quick heat & eat meal. Extra sauce can be added to soups or chili at a later time or used to top pizzas.
