Leftover Enchiladas & Rice
I had enough leftover from the other night for 2 people.
Frozen Chicken Nuggets & Lipton Alfredo Pasta Side
This was enough food for 2 people
Side Salad: lettuce, cucumbers, radishes, carrots, croutons
Although I started out with grand dinner plans, I just couldn't work the magic tonight. I have had a nagging headache all day, and it was raging by afternoon. Quick and easy was the best I could do.
My advice is to always have something on hand that can be thrown together for a quick meal. Frozen pizza, chicken strips or straight-up leftovers. Regardless of how bad the nutritional info on the prepackaged junk, it's probably better than most take-out food & most likely cheaper.
Leftover potential: Not really. Unless there are a few leftover nuggets that can be tossed in to tomorrow's school lunch box or used for a snack later.
